Cupping –  w procesie produkcji kawy speciality to kluczowy moment, w którym waży się jej być albo nie być w elicie kawowego świata. Cupping to ocena sensoryczna próbki zaparzonej kawy przez certyfikowanego q-gradera. Liczą się takie elementy jak: aromat, flavour (połączenie aromatu i smaku), posmak, kwasowość, cielistość, słodycz, balans. Profesjonalny cupping odbywa się przy pomocy specjalnych, srebrnych łyżek, z których q-grader próbuje naparu metodą siorbania. Oczywiście cupping może mieć też mniej poważna odsłonę i stanowić świetną zabawę pozwalającą nauczyć się podstawowego rozpoznawania przeróżnych kawowych smaków i aromatów.
